作法:
 
1、锅内烧一锅沸水,将猪肉放入煮10分钟出血沫后捞出放凉,不烫手后将其切成5厘米见方的块状
 
2、将生姜去皮洗净后切片、大葱斜切成片、香葱切成段后打结

4、把冰糖、200毫升黄酒、1汤匙老抽倒入锅内,撒入少许葱结;盖上锅盖,用锡纸封住沙锅的锅盖边缘,大火煮3分钟烧开后转最小火焖约50分钟
 
5.关火打开锅盖,把肉翻个面(即肉皮朝上),再倒入剩下的200毫升黄酒和老抽,盖上盖、密封边缘,最小火焖半个小时
